Avocado Citrus Salad with Lime and Mustard Dressing
For the hot, summer days ahead you can’t go past this tasty and colourful salad, with its heavenly dressing!
- Avocados, sliced thinly: 3
- Large oranges: 2
- Baby spinach leaves: 3 cups
- Onion, finely sliced: 1
- Thinly sliced toasted pecans: Small handful
- Lime juice: 2 limes
- Honey: 1 dsp
- Olive oil: 2 tbsp
- Wholegrain mustard: 2 tsp
- Cracked black pepper: To taste
- Sea salt: To taste
Peel the avocados and slice into thin strips, arrange on plates. Cut the oranges into 8, remove the peel and cut each segment in half. Toss with spinach leaves, onion, and dressing.
Place salad onto avocado pieces and top with the toasted pecans (or tamari-toasted sunflower seeds).
Combine lime juice, honey, olive oil, mustard, balck pepper and sea salt in a glass jar and shake vigorously.
