This is another of those amazing books that contains a mass of valuable information, reflecting an absolutely vast amount of research having been carried out by the authors. The quality of the information also reflects the professional training and experience of the authors. For readability, many topics are summarised by putting into table form the numerical values of the relevant quality. 376 pages, complete with references and very detailed index.
Raw diets are gaining popularity due to their reputation for providing radiant health and reversing many common ailments. People adopt raw diets weight loss, for ethical reasons or because fresh vegetables, fruits, nuts and seeds are nutrition powerhouses.
The authors should know their subject because Brenda Davis is a past chairperson of the Vegetarian Nutrition Dietetic Practice Group of the American Dietetic Association, and has worked as a clinical nutrition specialist, nutrition consultant and diabetes researcher. Vesanto Melina has taught nutrition at the University of British Columbia and at Seattle’s Bastyr University. She is a consultant to the Government of British Columbia, and co-author of the Dieticians of Canada and the American Dietetic Association’s position paper on vegetarian diets. In spite of all that, the book is not too technical for the lay person.
A most significant table – that is relevant to NHS guidance – is a comparison between five-year survival rates for melanoma on the raw, near-vegan Gerson therapy and on conventional therapy. With melanoma stages 1 and 2, the figures are 100% and 79% respectively, and for stage 4A, 39% and 6% respectively.
Some of the numerous tables that provide other vital information are:
A summary of the effects of cooking on phytochemicals;
The total antioxidant capacity of a long list of foods;
The antioxidant capacity of foods when both raw and cooked;
All the common foods, in alphabetical order, showing their contents of calories, protein, carbohydrates, fat and water;
Types of plant fibre and their health effects.
As an example of the thoroughness of the topics, let us look at that current favourite, enzymes. The 18-page chapter covers: functions; types (metabolic, digestive and food enzymes); brief history of enzyme discovery; vital life force; our enzyme capacity is finite; effects of lack of enzymes; ‘digestive leukocytosis’ (this is worth knowing!); effects of cooking; how food enzymes aid digestion.
The book is rounded of with half a dozen daily menus and 50 pages of recipes.
All in all, a remarkable work on food and nutrition.
